Mashed Chickpea Sandwich

  • 1 can Chickpeas, drained, rinsed and mashed
  • 3 tbsp Vegenaise or vegan mayo (I used 1/4 cup of homemade oil-free mayo)
  • 1/2 tbsp Dijon mustard
  • 1 tbsp Relish
  • 2 Green onions, finely sliced
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
Recipe Notes
once chickpeas are mashed add the rest of the ingredients and mix well serve over crackers or on your favorite bread
