Ten years ago I told myself that I wanted to create a book with pictures in it. I had no idea what that book would look like at the time. It brings me great joy to come full circle and present this recipe e-book to you.

When I first became vegetarian 20 years ago I had no idea what I was doing. There was so much information to absorb and coming from a background of unhealthy eating made it hard to grasp all the new ideas I was learning. There were many moments when I deviated but always managed to find my way back to a plant-based lifestyle. It wasn’t until I experimented in the kitchen and made things from scratch that I felt more confident about my day to day choices surrounding food. I became very interested not only in exploring combinations of food best for my health and wellness but also satisfying to my taste buds. Every day I experiment and learn something new. I find it very challenging to recreate non-vegan dishes into an unforgettable meal that even a non-vegan would enjoy.

Many of the meals in this book are refined sugar free, low in fat and oil free. However, it wasn’t my main focus to create meals that are oil free, low fat, high carb, low sugar, etc. I realize that today veganism has expanded to much more that excluding animal products and this can be overwhelming to those who are new to this way of life. I wanted to make it as simple as possible for someone to transition from a non-vegan to a vegan based regimen. My intention is to inspire you to have a broader sense of ideas of what you can actually eat on a vegan diet which is anything! If you put your mind to it you can veganize everything.
